Veggie Patties + Avo Hummus

Veggie patties

2 medium sized carrots
1 large zucchini
2 medium sized potatoes
Handful of spinach
3 eggs
1 small onion
1/3 cup of flour
100g of feta
1 tsp of garlic powder, sweet paprika and mixed herbs.
1 tbsp of Worcestershire sauce

1. In a bowl add the grated vegetables, spinach and onion. Mix well.
2. Add the herbs, Worcestershire sauce, eggs , flour and feta. Mix well.
3. Line a baking tray with parchment paper add a bit of olive oil.
4. With a spoon or a measuring cup scoop up a bit of veggie mixture and place it on the parchment paper.
5. Bake them for 15 minutes on 200C
6. Flip them and bake them for 10 more minutes.

Hummus

1 cup of canned chickpeas
Half an avocado
A small piece of feta cheese
1 tbsp of olive
1 tbsp of fresh parsley (optional)
1/2 tsp of sweet paprika
Lemon juice
Salt and pepper

In a food processor or blender add all ingredients and blend until smooth. Serve with mini galletti .
