Avocado Cucumber Smoothie

breakfast snack vegan vegetarian

INGREDIENTS

(makes 2 breakfast glasses or one big smoothie to snack on throughout the morning)

  • 1/2  ripe avocado
  • 1/2  cucumber
  • 1 packed cup of spinach leaves
  • 1 tbsp nut butter (eg peanut or cashew)
  • 1 tbsp chia seeds
  • 1 teaspoon minced ginger
  • 1/2 cup unsweetened almond milk
  • ice cubes / water added depending on consistency

METHOD

Blend all ingredients until smooth and creamy. Enjoy!
